Follow The Directions

01

Step

In a saucepan, combine water, wild rice, and a pinch of salt. Bring to a boil, then reduce heat to medium-low. Cover and simmer until the rice kernels burst open, approximately 45-50 minutes. Add more water if necessary to prevent scorching. Once cooked, fluff the rice with a fork and let it stand for 5-10 minutes to absorb any excess liquid.

02

Step

Preheat your oven to 425 degrees F (220 degrees C). Grease a baking dish large enough to comfortably hold the game hen.

03

Step

Melt 2 tablespoons of butter in a skillet over medium heat. Add the sliced mushrooms and cook, stirring occasionally, until they are partially cooked and have begun to release their liquid, about 5-8 minutes. Stir the sautéed mushrooms into the cooked wild rice.

04

Step

Season the game hen, both inside and out, generously with poultry seasoning, dried rosemary, salt, and pepper. Lightly stuff the hen with the prepared wild rice and mushroom mixture. Tie the legs together with cooking twine to help maintain the hen's shape during cooking. Place the stuffed hen in the prepared baking dish and distribute 2 tablespoons of butter pats around the hen.

05

Step

Bake in the preheated oven until the hen is no longer pink at the bone and the juices run clear when pierced with a fork, approximately 40-50 minutes. For accurate doneness, an instant-read thermometer inserted into the thickest part of the thigh, near the bone but not touching it, should read 165 degrees F (74 degrees C). Once cooked, transfer the hen to a cutting board. Cover loosely with a doubled sheet of aluminum foil and let it rest in a warm area for 10 minutes before slicing and serving.

For a richer flavor, use chicken broth instead of water to cook the wild rice.
Consider adding dried cranberries or chopped pecans to the wild rice stuffing for added texture and sweetness.
If you don't have cooking twine, you can use kitchen-safe rubber bands to tie the hen's legs together.
Resting the hen before slicing allows the juices to redistribute, resulting in a more moist and flavorful bird.
