Preheat an outdoor grill for medium heat. Lightly oil the grate and position it approximately 4 inches from the heat source. (5 minutes)

Pierce the sausages in a few places with a fork to prevent bursting. Slice a thin piece off the bottom of each onion half so they sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil. (5 minutes)

Arrange the sausages, onions, and peppers on the preheated grill. Cook, turning the sausages occasionally, until they are deeply browned and the juices run clear when pierced. Grill the vegetables until tender and the peppers develop a slight char. Remove vegetables and sausages from the grill. (15-20 minutes)

Transfer the grilled peppers to a paper bag, close it tightly, and allow them to cool slightly. This will steam the peppers and make it easier to remove the skins. Once cool enough to handle, peel off and discard the charred skin from the peppers. Slice the peppers into strips and thinly slice the onion halves. (10 minutes)

In a bowl, combine the sliced peppers and onions. Drizzle with 1 tablespoon of olive oil, season with salt and pepper to taste, and toss until evenly coated. (2 minutes)

To assemble the sandwiches, place a grilled sausage in each toasted roll. Generously top with the pepper and onion mixture. Serve immediately and enjoy! (3 minutes)

For an extra layer of flavor, consider adding a sprinkle of dried oregano or a pinch of red pepper flakes to the pepper and onion mixture.
If you prefer a sweeter flavor, use a yellow bell pepper in addition to the red.
Ensure the sausages are cooked through to an internal temperature of 160°F (71°C) for safety.
For easier cleanup, you can line the paper bag with paper towels to absorb excess moisture from the peppers.
