Cook, stirring frequently to break up the meat, until evenly browned. Drain off any excess grease. Transfer the cooked ground beef to a 9x13 inch baking dish or a large casserole dish. (15 minutes)

Arrange two layers of thinly sliced potatoes over the ground beef, slightly overlapping each slice. Season each layer with salt and pepper. (10 minutes)

In the same skillet, melt the butter over medium heat. Add the sliced onions and mushrooms and sauté until softened and lightly browned. Spread the onion and mushroom mixture evenly over the top of the potato layers. (10 minutes)

In a separate bowl, whisk just enough water into the condensed cream of chicken soup to make it easily pourable. Spoon the thinned soup over the top of the casserole, ensuring even coverage. (5 minutes)

Scatter the crushed cracker crumbs evenly over the top of the soup layer. Sprinkle lightly with paprika. Cover the dish tightly with aluminum foil. (2 minutes)

Bake in the preheated oven for 1 hour, or until the potatoes are tender when pierced with a fork. (60 minutes)

Remove the aluminum foil and return the casserole to the oven to brown the top, approximately 10 minutes. Keep a close eye on it to prevent burning. (10 minutes)

Let the casserole rest for 5-10 minutes before serving. This allows the flavors to meld together and the casserole to set slightly.

Feel free to substitute ground turkey or plant-based ground meat for the ground beef.
For a richer flavor, use beef broth instead of water to thin the cream of chicken soup.
Add a layer of shredded cheese (cheddar, Monterey Jack, or a blend) during the last 15 minutes of baking for an extra cheesy casserole.
If you don't have saltine crackers, you can use crushed Ritz crackers, breadcrumbs, or even crushed cornflakes as a topping.
