In a skillet set over medium heat, brown the hot Italian sausage, mild Italian sausage, and ground chuck. Stir frequently, breaking up the meat as it cooks, until fully browned. Season generously with salt and pepper. (10-15 minutes)

Using a slotted spoon, transfer the cooked sausage and chuck to the simmering tomato puree. Leave the rendered fat in the skillet. (2 minutes)

Add the diced onion and garlic to the skillet with the rendered fat. Cook, stirring occasionally, until the onions are softened and lightly browned. (5-8 minutes)

Transfer the onion and garlic mixture to the pot with the meat and tomato puree. (2 minutes)

In the same skillet, combine the water and tomato paste. Stir over low heat until the tomato paste is fully dissolved and the mixture has slightly thickened. (15 minutes)

Pour the tomato paste mixture into the pot with the sauce. Sprinkle the Parmesan cheese, dried basil, dried oregano, and dried parsley over the sauce. Stir well to combine all ingredients. (2 minutes)

Reduce the heat to low, cover the pot, and simmer gently for at least 3 hours, stirring occasionally to prevent sticking. The longer it simmers, the richer the flavor will become.

For an even richer flavor, consider adding a splash of red wine to the sauce while it simmers.
Taste and adjust seasonings as needed. Don't be afraid to add a pinch of sugar to balance the acidity of the tomatoes.
This sauce freezes beautifully. Allow it to cool completely before transferring it to freezer-safe containers.
