Follow The Directions

Preheat the oven to 425 degrees F (220 degrees C). Line a 10x15-inch baking pan with aluminum foil. (5 minutes)

Arrange chicken, potatoes, and cherry tomatoes in a single layer on the prepared pan. Drizzle with olive oil and sprinkle with salt and pepper. (10 minutes)

Roast in the preheated oven until vegetables are tender and chicken is no longer pink in the center and the juices run clear, 20 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Serve with pesto and garnish with fresh basil. (5 minutes)

For extra flavor, marinate the chicken thighs in pesto for at least 30 minutes before roasting.
Feel free to add other vegetables like bell peppers, zucchini, or broccoli to the sheet pan.
If you don't have fresh basil, dried basil can be used as a substitute. Use about 1 teaspoon of dried basil.
To make clean-up even easier, you can use parchment paper instead of aluminum foil.
