Follow The Directions

01

Step

In a large bowl, combine the chicken, white wine, prunes, olive oil, red wine vinegar, capers and their brine, brown sugar, oregano, parsley, olives, garlic, bay leaves, salt, and pepper. Ensure the chicken is well-coated. (5 minutes)

02

Step

Cover the bowl tightly with plastic wrap, or transfer the mixture to a large resealable plastic bag. Marinate in the refrigerator for at least 12 hours, or up to 24 hours for optimal flavor infusion. (12-24 hours)

03

Step

Preheat your oven to 325°F (165°C). (10 minutes)

04

Step

Transfer the chicken and marinade to a 9x13-inch baking dish, arranging the chicken in a single layer. (5 minutes)

05

Step

Bake in the preheated oven for approximately 40 minutes, or until the chicken is cooked through and the juices run clear when pierced with a fork. An instant-read thermometer inserted into the thickest part of the chicken should register 165°F (74°C). (40 minutes)

06

Step

Remove from oven and let rest for 5 minutes before serving

For a richer flavor, consider using bone-in, skin-on chicken thighs. Adjust baking time accordingly.
Serve Chicken Marbella with rice, couscous, or crusty bread to soak up the delicious sauce.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. The flavors will meld even further, making it even more delicious the next day!

I've tried this recipe with both fresh and dried oregano, and both work well. Fresh oregano has a slightly more intense flavor.

Don't be afraid to adjust the amount of garlic to your liking. I sometimes add a few extra cloves for a bolder flavor.

Marinating the chicken overnight is key! It really allows the flavors to meld together.
