Gradually add the flour to the wet ingredients, mixing until a dough forms. Be careful not to overmix. If the dough is too sticky to handle, add a little more flour, one tablespoon at a time. (8 minutes)

Shape the dough into approximately 36 small, uniform balls. (10 minutes)

Place the granulated sugar in a shallow dish. Roll each dough ball in the sugar, ensuring it's evenly coated. (7 minutes)

Arrange the sugar-coated dough balls onto the prepared baking sheets, leaving about 1 inch of space between each cookie. (3 minutes)

Bake in the preheated oven for 8-10 minutes, or until the edges are golden brown and the cookies are set. (10 minutes)

Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. (15 minutes)

For a more intense anise flavor, lightly crush the anise seeds before adding them to the mixture.
The dough can be made ahead of time and stored in the refrigerator for up to 24 hours. Allow the dough to come to room temperature before rolling into balls and baking.
Store cooled cookies in an airtight container at room temperature for up to 5 days.
