For an extra layer of flavor, sauté finely diced onion and minced garlic in butter before adding the remaining ingredients. Feel free to substitute broccoli florets or peas for the spinach, depending on your preference and what you have on hand. If you don't have evaporated milk, you can use regular milk, but the sauce will be slightly thinner. Adjust the amount of hot pepper sauce to control the level of spice. Fresh mushrooms can be used in place of canned. Sauté them in a pan with butter until softened before adding them to the sauce.
