For a sweeter salad, try adding a drizzle of honey or maple syrup to the dressing. If you don't have red wine vinegar, white wine vinegar or apple cider vinegar can be substituted. Fresh dill is a wonderful alternative to dried dill, use about 1/4 cup chopped. Roasting the beets instead of boiling will intensify their flavor. Roast at 400°F (200°C) for about 45-60 minutes, or until tender.
