Follow The Directions

01

Step

Gather all ingredients.

02

Step

Preheat the oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish with cooking spray. Place baking dish on a baking sheet.

03

Step

Cook bacon in a large skillet over medium heat, turning occasionally, until crisp. Place bacon on a paper towel to drain. Drain all but 1 tablespoon of bacon fat in the skillet. Chop bacon when cool enough to handle. (Approximately 10 minutes)

04

Step

Meanwhile, bring a large pot of salted water to a boil. Add potatoes and return to a boil. Cook, covered, until potatoes are fork tender. Drain potatoes. Return potatoes back to the pot along with evaporated milk, butter, 1/2 teaspoon salt, and 1/2 teaspoon pepper. (Approximately 15-20 minutes)

05

Step

Mash potatoes with a potato masher until smooth. Stir 1/4 cup chopped bacon into mashed potatoes.

06

Step

Add ground beef, onion, and bell pepper to the skillet with reserved bacon fat. Cook over medium heat until meat is browned and cooked through, stirring occasionally. (Approximately 8-10 minutes)

07

Step

Add corn kernels, garlic, and paprika to the skillet. Cook and stir for 1 minute.

08

Step

Stir in barbecue sauce, Worcestershire sauce, mustard, remaining 1 teaspoon salt, and 1/2 teaspoon pepper.

09

Step

Spread ground beef mixture in prepared baking dish.

10

Step

Spread potatoes evenly over beef. Sprinkle with cheese, remaining bacon, and French fried onions.

11

Step

Bake until meat mixture is bubbly and cheese is melted. Garnish with parsley before serving. (Approximately 20-25 minutes)

12

Step

Serve warm and enjoy!

For an extra smoky flavor, use smoked bacon.
Feel free to substitute ground turkey or chicken for ground beef.
Add a pinch of cayenne pepper to the beef mixture for a spicy kick.
The casserole can be assembled ahead of time and refrigerated for up to 24 hours before baking. Add an extra 10-15 minutes to the baking time if baking from cold.
