Follow The Directions

On a lightly floured surface, roll out the thawed puff pastry to 1/8 inch thickness. (5 minutes)

Cut one sheet of puff pastry into 3 equal pieces lengthwise. Cut each piece in half crosswise to create 6 equal rectangles. (3 minutes)

Line a baking sheet with aluminum foil. Place the pastry rectangles on the lined sheet and brush the edges with the beaten egg. (2 minutes)

On one half of each pastry rectangle, sprinkle 1 tablespoon of grated Cheddar cheese, top with a slice of country ham, and spread 1 tablespoon of béchamel sauce. Repeat with another layer of cheese and ham, finishing with 1 tablespoon of béchamel. (10 minutes)

Fold the remaining half of the pastry over the filling to form a hand pie. Crimp the edges with the tines of a fork to seal. Brush the tops with the remaining egg wash. Cut small slits on top of each hand pie to allow steam to escape during baking. (10 minutes)

Bake the hand pies for 20-25 minutes, or until golden brown. (20-25 minutes)

Immediately transfer the baked hand pies to a wire rack to cool slightly before serving. (2 minutes)

For an extra golden crust, brush the hand pies with egg wash a second time before baking.
