Add the goat cheese, minced garlic, Greek yogurt, tahini, chopped thyme, lemon juice, salt, honey, and olive oil to the food processor. (2 minutes)

Roasting the beets brings out their natural sweetness, but you can also boil or steam them if you're short on time.
For a smoother dip, use a high-quality goat cheese and ensure it's softened before blending.
Feel free to experiment with different herbs and spices. A pinch of red pepper flakes adds a nice kick.
