Step

Heat olive oil in a large stock pot over medium-high heat. Add chopped onion and cook for approximately 3 minutes, until softened. Stir in minced garlic, dried oregano, and ground cumin. Cook for another 2 minutes, allowing the spices to bloom and release their aroma.

While the onion is cooking, puree 2 cans of the cannellini beans in a blender until smooth and creamy. This will add a velvety texture to the soup.

To the stock pot with the sautéed onions and spices, add the pureed cannellini beans, the remaining can of cannellini beans (undrained), diced tomatoes with green chilies, whole kernel corn, cream style corn, seasoned black beans (undrained), and shredded cooked chicken. Stir well to combine all the ingredients.

Bring the soup to a boil, then reduce the heat to low and simmer for 5 minutes, allowing the flavors to meld together. Turn off the heat and stir in fresh lime juice to brighten the soup.

Ladle the chicken tortilla soup into bowls and garnish generously with tri-color tortilla strips for added crunch and visual appeal. Serve immediately and enjoy!

For a spicier soup, use hot diced tomatoes with green chilies or add a pinch of cayenne pepper.
To make this soup vegetarian, omit the chicken and add more beans or vegetables.
The soup can be stored in the refrigerator for up to 3 days. Reheat gently before serving.
