For a smokier flavor, try using smoked paprika in addition to or in place of some of the black pepper. Adjust the number of chipotle peppers to control the level of spiciness. For a creamier texture, use whole milk or heavy cream instead of half and half. If you don't have cornstarch, you can use all-purpose flour, but be sure to cook it a little longer to eliminate the flour taste. To make this ahead of time, assemble the mac and cheese but do not bake. Cover and refrigerate for up to 24 hours. When ready to bake, add 10-15 minutes to the baking time.
