In a large frying pan or skillet, melt 1 stick of butter over medium heat. Add the diced onion and minced garlic and sauté until the onion is translucent and fragrant, about 5 minutes. (10 minutes)

Add the flour to the pan and stir quickly to form a thick, dough-like consistency. Gradually whisk in the chicken broth, milk, and chicken bouillon granules until the mixture is smooth and free of lumps. Remove from heat and transfer to a large mixing bowl. (5 minutes)

Stir in the sour cream, Colby-Jack cheese, and Cheddar cheese until well combined and the cheese is melted and creamy. (3 minutes)

In a 9x13-inch casserole dish, spread the shredded chicken evenly across the bottom. Layer the cooked broccoli over the chicken, and season with salt and pepper to taste. Pour the cheese sauce mixture evenly over the chicken and broccoli. (5 minutes)

Bake, uncovered, in the preheated oven until the casserole is heated through and bubbly, about 25 minutes. (25 minutes)

While the casserole is baking, prepare the cornflake topping. Place the crushed cornflakes in a zip-top bag. Add the melted butter, seal the bag, and massage with your hands until the cornflakes are evenly coated with butter. (5 minutes)

Remove the casserole from the oven and evenly distribute the buttered cornflake mixture over the top. Return to the oven and bake for an additional 5 minutes, or until the topping is golden brown and crispy. (5 minutes)

For a richer flavor, try using Gruyere or Monterey Jack cheese in addition to or in place of the Colby-Jack or Cheddar.
To save time, use rotisserie chicken instead of cooking your own chicken breasts.
Feel free to add other vegetables, such as sliced mushrooms or bell peppers, to the casserole.
The cornflake topping can be prepared ahead of time and stored in an airtight container until ready to use.
If you don't have cornflakes, crushed Ritz crackers or breadcrumbs can be used as a substitute.
