For a richer flavor, try using Gruyere or Monterey Jack cheese in addition to or in place of the Colby-Jack or Cheddar. To save time, use rotisserie chicken instead of cooking your own chicken breasts. Feel free to add other vegetables, such as sliced mushrooms or bell peppers, to the casserole. The cornflake topping can be prepared ahead of time and stored in an airtight container until ready to use. If you don't have cornflakes, crushed Ritz crackers or breadcrumbs can be used as a substitute.
