Heat a large skillet over medium-high heat. Cook and stir sausage, breaking it up with a spoon, until browned and cooked through, 5 to 7 minutes. Transfer sausage to a medium bowl. Sauté onion in the same skillet until translucent and softened, about 5 minutes. Transfer onion to the bowl with the cooked sausage.

Add eggs, 1/2 of the Cheddar cheese, milk, salt, and pepper to the sausage-onion mixture in the bowl. Whisk until well combined.

Coarsely grate the cooled potatoes and add them to the egg mixture in the bowl. Gently stir until evenly incorporated, then pour the mixture into the prepared baking dish. Sprinkle the remaining Cheddar cheese evenly over the top.

Bake in the preheated oven until heated through, the cheese is melted and bubbly, and the casserole is set, about 35 minutes. Let stand for 10 minutes before serving.

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the sausage while cooking.
If you're short on time, you can use pre-cooked sausage and frozen diced potatoes.
To make ahead, assemble the casserole and refrigerate it overnight. Add 10-15 minutes to the baking time.
