Follow The Directions

01

Step
2 mins

In a heavy-bottomed saucepan, melt ghee over medium heat. Add the grated carrots and sauté, stirring frequently, until they soften and deepen in color, about 5 minutes.

02

Step
6 mins

Pour in the milk and bring to a gentle simmer. Continue to cook, stirring occasionally to prevent sticking, until the milk is mostly absorbed and the mixture begins to thicken, about 10 minutes. Reduce heat to medium-low.

03

Step
10 mins

In a separate bowl, combine water and sugar, stirring until the sugar is fully dissolved. Add this sugar syrup to the carrot mixture, along with the raisins and ground cardamom. Stir well to combine.

04

Step
1 mins

Continue to cook, stirring regularly, until the raisins are plump and the halwa has thickened to your desired consistency, about 10 minutes. The mixture should be moist but not watery.

For a richer flavor, use homemade ghee if possible.
Adjust the amount of sugar to your liking. You can also substitute with other sweeteners like jaggery or brown sugar.
Add a pinch of saffron strands soaked in warm milk for an enhanced aroma and color.
Garnish with chopped nuts like almonds, cashews, or pistachios before serving.
Halwa can be served warm or at room temperature. It can be stored in the refrigerator for up to 3-4 days.
