In a large, deep skillet, brown the ground beef over medium-high heat until evenly cooked. (Approximately 8-10 minutes). Drain off any excess grease, crumble the beef, and set aside.

In a large soup pot or Dutch oven, combine the browned ground beef, chopped cabbage, drained carrots, whole kernel corn (undrained), green beans (undrained), peas (undrained), sliced potatoes (undrained), mixed vegetables (undrained), asparagus (undrained), and tomato juice.

Bring the mixture to a simmer over medium heat. Season with garlic powder, onion powder, salt, and pepper to taste. (Approximately 5 minutes)

Reduce the heat to low, cover, and simmer for at least 1 hour, or until the cabbage is tender and the flavors have melded together beautifully. Stir occasionally to prevent sticking. (Approximately 60-90 minutes)

Feel free to customize this soup with your favorite vegetables! Diced zucchini, bell peppers, or celery would all be excellent additions.
For a richer flavor, consider browning the ground beef with a diced onion and a clove of minced garlic.
This soup tastes even better the next day, as the flavors have more time to develop. It also freezes well, making it a great make-ahead meal.
