Line the bottom of the prepared dish with 1/3 of the potato slices; sprinkle with 1/4 teaspoon each of salt and pepper, followed by 1/3 of the onion slices, 1/3 of the Parmesan cheese, and top with 1/3 of the sauce. Repeat layers once more. (15 minutes)

Finally, top with the remaining potatoes, salt, and pepper, followed by the remaining onion slices, and sauce. (10 minutes)

Sprinkle with the remaining Parmesan cheese. (2 minutes)

Bake, uncovered, until the potatoes are tender and the top is golden brown, 50 to 60 minutes. (60 minutes)

Let stand for 15 to 20 minutes before serving. (20 minutes)

Garnish with fresh chives and a crack of black pepper.

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the sauce.
Use a mandoline for even potato slices.
The casserole can be assembled ahead of time and refrigerated for up to 24 hours before baking. Add 10-15 minutes to the baking time if baking from cold.
