Spoon a scant 1/3 cup of the cabbage mixture into the skillet, and flatten evenly with a flat spatula to about 1/4-inch thickness. Spoon in 3 more fritters, about 1 inch apart, and flatten.

Cook Until Golden: Cook until golden brown on both sides. (about 3 minutes per side).

Rest and Repeat: Remove fritters and transfer to a wire rack; loosely cover with aluminum foil to keep warm. Repeat the frying process 3 more times with the remaining cabbage mixture and 6 tablespoons of oil.

Serve: Garnish with additional scallions and serve warm with the Feta Dill Dip.

For extra crispy fritters, gently squeeze excess moisture from the cabbage mixture before frying.
Adjust the amount of red pepper to suit your spice preference.
The Feta Dill Dip can be made ahead of time and stored in the refrigerator for up to 3 days.
