In a small bowl, combine the chipotle chile powder, garlic powder, ground cinnamon, and onion powder. Set aside. (Prep time: 2 minutes)

Thoroughly pat the drained pineapple rings dry with paper towels. This will help them caramelize properly. (Prep time: 2 minutes)

Heat 1 teaspoon of olive oil in a large, heavy-bottomed, nonstick skillet over medium-high heat. Add the pineapple rings and thinly sliced red onion. Sprinkle with 3 tablespoons of the reserved pineapple juice and the brown sugar. Cook, flipping occasionally, until the pineapple is lightly browned and the red onion is softened and caramelized. (Cook time: 6-8 minutes). Transfer the pineapple-onion mixture to a plate and set aside.

Pat the pork chops dry with paper towels and season both sides generously with salt and freshly ground black pepper. (Prep time: 2 minutes)

Heat the remaining 2 teaspoons of olive oil in the same skillet over medium-high heat until shimmering. Add the pork chops in a single layer (do not overcrowd the pan). Cook until the bottom is nicely browned, about 3 minutes. Flip the pork chops and immediately sprinkle the reserved chipotle spice mixture evenly over the top. Cook until the other side is browned, about 3 minutes. Continue flipping and cooking until the pork chops are cooked through and no longer pink in the center, about 3 to 5 minutes more. An instant-read thermometer inserted into the thickest part should read 145 degrees F (63 degrees C). (Cook time: 8-11 minutes)

Transfer the cooked pork chops to a plate and top with the caramelized pineapple-onion mixture. Sprinkle generously with crumbled goat cheese. Serve immediately. (Prep time: 1 minute)

For a deeper flavor, marinate the pork chops in 2 tablespoons of the reserved pineapple juice and 1 tablespoon of soy sauce for at least 30 minutes, or up to 2 hours, before cooking.
If you don't have goat cheese, crumbled feta or cotija cheese would also work well.
A sprinkle of fresh parsley or cilantro adds a bright, fresh finish to the dish.
Serve with a side of rice or quinoa to soak up the delicious pan juices.
