Preheat the oven to 350 degrees F (175 degrees C). Generously coat the inside of an 8x13-inch baking dish with cooking spray. (5 minutes)

Mash black beans in a large bowl until mostly smooth, leaving some texture. (5 minutes)

In the same bowl, combine the mashed black beans with crushed crackers, Cheddar cheese, diced bell peppers, corn kernels, diced onion, diced jalapeño pepper, egg white, taco seasoning mix, and Ranch-style seasoning mix. Mix thoroughly until all ingredients are evenly distributed. (10 minutes)

Spoon the black bean mixture into the prepared baking dish. Gently shape and form the mixture into a loaf. (5 minutes)

Bake in the preheated oven until the meatloaf is cooked through and slightly firm to the touch, approximately 45 to 60 minutes. (45-60 minutes)

Let the meatloaf cool for 10-15 minutes before slicing and serving. This allows the loaf to firm up and makes it easier to slice. (10-15 minutes)

For a spicier kick, add a pinch of cayenne pepper or a dash of your favorite hot sauce to the black bean mixture.
To add more depth of flavor, sauté the diced onion and bell peppers in a little olive oil before adding them to the black bean mixture.
If you don't have buttery round crackers on hand, you can substitute with plain breadcrumbs or crushed tortilla chips.
This meatloaf can be served hot or cold. It's delicious served with a dollop of sour cream, salsa, or your favorite toppings.
