Preheat your choice of frying oil (vegetable, canola, or peanut oil work well) in a deep fryer or a large, heavy-bottomed pot to 375°F (190°C). Use a thermometer to ensure accurate temperature. (5 minutes)

In a large bowl, whisk together the flour, cayenne pepper, and salt until evenly combined. (1 minute)

Add the thinly sliced onion rings to the bowl and toss thoroughly, ensuring each ring is completely coated in the flour mixture. (2 minutes)

Working in batches to avoid overcrowding, gently shake off any excess flour mixture from the onion rings. (2 minutes per batch)

Carefully lower the coated onion rings into the hot oil. Fry for 3 to 5 minutes, or until they are a deep golden brown, resembling the color of cured tobacco. (3-5 minutes per batch)

Use a slotted spoon or a frying skimmer to remove the fried onion rings from the oil and transfer them to a plate lined with paper towels. This will help absorb excess oil and keep them crispy. (1 minute per batch)

Season immediately with a light sprinkle of sea salt, if desired. Serve hot and enjoy the addictive crunch!

For a richer flavor, try using smoked paprika instead of cayenne pepper.
If you don't have a deep fryer, a large pot with high sides will work just as well. Just be extra careful when working with hot oil.
These are best served immediately, but can be reheated in a 350°F (175°C) oven for a few minutes to restore crispness.
Experiment with different seasonings! Garlic powder, onion powder, or a pinch of chili flakes can add interesting variations.
