For an even richer flavor, use guanciale instead of pancetta. If the sauce seems too thick, add a tablespoon of pasta water (or in this case, a tablespoon of water) to thin it out. Be careful not to overcook the zoodles, as they will become watery. They should still have a slight bite to them. For a vegetarian option, omit the pancetta and add sautéed mushrooms or roasted vegetables.
