Prepare the Bulgur: In a saucepan, combine the bulgur and vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes, or until the liquid is absorbed. Fluff with a fork and set aside to cool. (Prep time: 15 minutes)

Make the Kofta Mixture: In a large bowl, combine the adzuki beans, 2 tablespoons of olive oil, onion, garlic, cumin, coriander, cilantro, hot sauce, and egg. Mash with a potato masher until fairly smooth. Soak the bread in milk, then squeeze out the excess. Add the soaked bread and cooled bulgur to the bean mixture. Mix well with your hands until everything is thoroughly combined. (Prep time: 20 minutes)

Chill the Mixture: Cover the bowl and refrigerate the kofta mixture for at least 1 hour, or up to 2 hours, to allow it to firm up. This will make it easier to form the kabobs. (Chill time: 60-120 minutes)

Preheat the Oven: Preheat your oven to 425 degrees F (220 degrees C).

Form the Kabobs: Wet your hands to prevent sticking. Take a handful of the kofta mixture and shape it into an oval. Gently press four ovals onto each skewer. (Prep time: 15 minutes)

Bake the Kabobs: Brush the kabobs with olive oil. Place them on a baking sheet lined with parchment paper or a broiling pan. Bake for 10-15 minutes in the preheated oven. Turn the kabobs over, brush again with olive oil, and continue baking for another 5-10 minutes, or until they are golden brown and crispy. (Bake time: 15-25 minutes)

Serve: Remove the kabobs from the oven and let them rest for a few minutes before serving. Serve hot with your favorite accompaniments, such as tabbouleh, pita bread, and olives.

For best results, soak the skewers in water for at least 30 minutes before using. This will prevent them from burning in the oven.
If the kofta mixture is too soft, add a little more breadcrumbs or bulgur to help bind it together.
Feel free to adjust the amount of hot sauce to your liking. If you prefer a milder flavor, you can omit it altogether.
These kabobs can also be grilled over medium heat for about 10-12 minutes, turning occasionally, until cooked through and slightly charred.
Leftover kofta kabobs can be stored in the refrigerator for up to 3 days. Reheat them in the oven or microwave before serving.
