Follow The Directions

01

Step

In an 8-quart Dutch oven over medium-high heat, sear the veal roast on all sides until nicely browned. Season with salt, pepper and thyme. Add 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes.

02

Step

Add the carrots, potatoes, and onions to the pot. Cover and simmer for 30 minutes.

03

Step

Toss in the mushrooms. Cover and simmer for 15 minutes, or until the veal and vegetables are tender. Remove the roast and vegetables from the pot and keep warm.

04

Step

In a cup, whisk together the flour and 2 tablespoons of water until smooth and lump-free. Gradually whisk the mixture into the liquid in the Dutch oven. Cook, stirring constantly, until the gravy has slightly thickened. (approximately 5 minutes)

05

Step

Stir in the frozen peas and heat through. (approximately 3 minutes)

06

Step

In a small bowl, whisk the egg yolks. Temper the egg yolks by slowly drizzling in a small amount of the hot gravy, whisking constantly. Slowly pour the egg yolk mixture back into the gravy, whisking continuously until the gravy thickens to your desired consistency. (approximately 2 minutes) DO NOT BOIL!

07

Step

To serve, slice the veal roast and arrange it on a platter with the vegetables. Spoon some of the gravy over the veal and vegetables. Serve the remaining gravy in a gravy boat.

For an even richer flavor, consider using homemade veal or chicken stock instead of water.
If you prefer a thicker gravy, you can increase the amount of flour slightly. Make sure to whisk it well with water to avoid lumps.
A splash of dry white wine added along with the broth will enhance the depth of flavor.
