For the best flavor, use high-quality pork sausages with a good fat content. Yukon Gold potatoes create a particularly creamy and flavorful mash, but Russet potatoes can also be used. Don't rush the caramelization of the onions. This is where the gravy gets its depth of flavor. If the gravy is too thin, you can thicken it with a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water). Add the slurry to the simmering gravy and cook until thickened. Feel free to add a splash of Worcestershire sauce to the gravy for extra umami.
