Heat olive oil in an 8-quart pot or Dutch oven over medium heat. (5 minutes)

Brown the pork and beef cubes in the hot oil, working in batches to avoid overcrowding the pot. Set aside. (15 minutes)

Stir in chicken broth, chicken pieces, potatoes, and carrots. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour. (1 hour)

Stir in the stewed tomatoes, barbecue sauce, green beans, okra, corn, onion, green bell pepper, celery, apple cider vinegar, Worcestershire sauce, garlic, bay leaves, salt, black pepper, and hot pepper sauce. (10 minutes)

Bring the stew back to a boil, reduce heat to low, cover, and simmer for 1 more hour, or until the chicken is cooked through and the vegetables are tender. (1 hour)

Remove and discard bay leaves before serving. Ladle the Burgoo into bowls and serve hot.

For a richer flavor, consider browning the meat in bacon fat instead of olive oil.
Adjust the amount of barbecue sauce to your preference for smokiness and sweetness.
If you don't have fresh okra, frozen okra works perfectly well in this recipe.
Bone-in chicken adds more flavor to the stew; you can shred the chicken meat and return it to the pot before serving.
This stew tastes even better the next day, as the flavors meld together.
