Follow The Directions

01

Step
5 mins

In a very large jar with a tight-fitting lid (at least 1-gallon capacity), create layers: Begin by placing half of the plums at the bottom, pressing them firmly to release their juices. (5 minutes)

02

Step
3 mins

Sprinkle half of the sugar evenly over the plums, followed by half of the vodka. Drizzle half of the vanilla extract over the vodka. Scatter about half of the orange peel pieces into the jar. (3 minutes)

03

Step
5 mins

Repeat the layering process with the remaining plums, sugar, vodka, vanilla extract, and orange peel pieces, pressing down firmly on each layer. Screw the jar lid on tightly. (5 minutes)

04

Step
7 mins

To create an airtight seal, drip melted wax (from an unscented candle) around the jar lid. This prevents any leakage during the infusion process. (7 minutes)

05

Step
504 hrs

Wrap the jar completely in a dark-colored towel to block out all light. Place the jar on its side in a cool, dark place, such as a pantry or basement. Turn the jar over once a day for 21 days, always replacing the towel to ensure complete darkness. This allows the flavors to meld and mature. (21 days)

06

Step
15 mins

After 21 days of infusion, strain the liqueur through a fine-mesh strainer lined with several layers of cheesecloth to remove all solids. Discard the plums and orange peel. (15 minutes)

07

Step
10 mins

Bottle the strained liqueur in attractive glass bottles with tight-fitting caps. Store in a cool, dark place. The liqueur will continue to improve in flavor over time. (10 minutes)

Use ripe, but firm plums for the best flavor and color.
Ensure the jar is scrupulously clean before starting to avoid any unwanted fermentation.
For a spicier liqueur, add a few star anise or a cinnamon stick to the jar during the infusion process.
The plum-infused vodka makes an excellent base for cocktails. Try adding a splash to sparkling wine or mixing with club soda and a squeeze of lime.
Adjust the amount of sugar to your taste. You can always add more after the infusion process if needed.
Be patient! The 21-day infusion period is crucial for developing the rich flavor of the liqueur.
