Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper. (5 minutes)

In a large bowl, gently combine the diced tomatoes, onion, cilantro, jalapeño pepper, and garlic salt. Set aside to allow the flavors to meld. (5 minutes)

Heat a sauté pan over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no longer pink, approximately 5 to 7 minutes. Drain off any excess fat, then return the beef to the pan. (7 minutes)

Stir in the water and taco seasoning mix. Cook, stirring constantly, until the liquid is absorbed and the beef is well-coated with the seasoning, about 2 to 3 minutes. (3 minutes)

Gently fold in the tomato mixture and shredded pepper Jack cheese until evenly distributed. Remove from heat and let cool slightly. (3 minutes)

Lightly flour a clean work surface. Gently roll out each empanada wrapper to a 6-inch circle. Place approximately 1/3 cup of the beef filling in the center of each wrapper. Fold the wrapper in half to enclose the filling, forming a half-moon shape. Crimp the edges with a fork to create a tight seal. Use a fork to pierce the top of each pie twice to allow steam to escape during baking. Transfer the assembled pies to the prepared baking sheet. (25 minutes)

Prepare an egg wash by whisking together the egg and a tablespoon of water in a small bowl until well combined. Brush the egg wash evenly over the tops of the pies to promote browning. (3 minutes)

Bake the Taco Hand Pies on the middle rack of the preheated oven until golden brown and the filling is heated through, about 20 minutes. (20 minutes)
For an extra layer of flavor, consider adding a spoonful of refried beans to each hand pie before adding the beef filling.
These pies can be assembled ahead of time and refrigerated for up to 24 hours before baking. Add a few minutes to the baking time if baking from cold.
Serve with your favorite taco toppings, such as sour cream, guacamole, or hot sauce.
