For extra flavor, try adding a pinch of lemon or orange zest to the batter. If the batter is too wet, add a little more flour, one tablespoon at a time, until it reaches a workable consistency. Be sure to use low heat, and don't overcrowd the pan. Overcrowding or high heat will cause uneven browning, or that they will burn. For a lighter version, you can bake the syrniki in a preheated oven at 350°F (175°C) for about 20-25 minutes, or until golden brown.
