Follow The Directions

01

Step

In a Dutch oven or large pot, melt olive oil and butter over low heat. Add diced onion and cook until softened and translucent, about 10 minutes.

02

Step

Sprinkle flour over the softened onions and cook, stirring constantly, until the flour is incorporated and the mixture is lightly golden, about 5 minutes.

03

Step

Gradually whisk in the vegetable broth, ensuring no lumps form. Add the diced potatoes and bring the mixture to a gentle boil. Reduce heat to medium, partially cover, and simmer until potatoes are tender, about 10 minutes.

04

Step

Stir in the corn kernels, half-and-half, diced red bell pepper, diced green bell pepper, black pepper, and salt. Reduce heat to low and simmer, stirring occasionally, until the corn is tender and the flavors have melded, about 8 minutes.

For a richer flavor, consider using chicken broth instead of vegetable broth.
Fresh corn cut directly from the cob offers the best flavor. However, frozen corn can be substituted when fresh is not available.
Feel free to add other vegetables such as celery, carrots, or zucchini.
To make this chowder vegan, substitute the butter with vegan butter, half-and-half with plant-based milk, and ensure your vegetable broth is vegan-friendly.

So easy to make, and the fresh corn makes all the difference. I used frozen corn when fresh wasn't available, and it was still good!

  • Madisen Heaneyschneider

I substituted coconut milk for the half-and-half to make it dairy-free. Delicious!
