Preheat oven to 350 degrees F (175 degrees C). (5 minutes)

For the crust, combine 2 cups flour, 1/4 cup powdered sugar, cornstarch, lemon zest, and 1/8 teaspoon salt in a food processor. Pulse until combined. Add butter and oil; pulse until crumbly. Press into an 8-inch square baking dish. (10 minutes)

Bake the crust in the preheated oven until golden brown, approximately 20 minutes.

While the crust is baking, puree strawberries in the food processor until smooth. Strain the mixture to remove seeds. In a bowl, whisk together the strawberry puree, granulated sugar, 1/3 cup flour, lemon juice, eggs, and 1/8 teaspoon salt until well combined. (15 minutes)

Remove the crust from the oven and immediately pour the strawberry-lemon filling over the hot crust. (2 minutes)

Return the baking dish to the oven and bake until the filling is just set, about 20 minutes.

Remove from the oven and cool completely on a wire rack (about 30 minutes). Refrigerate until chilled (about 2 hours).

Dust with powdered sugar and cut into 16 bars. (5 minutes)

For a brighter lemon flavor, add an extra teaspoon of lemon zest to the filling.
Be sure to strain the strawberry puree well to remove as many seeds as possible for a smoother texture.
Chilling the bars completely before cutting ensures clean, even slices.
