In a large saucepan or Dutch oven, heat olive oil over medium-high heat. Add onion, celery, and carrot. Cook, stirring occasionally, until the onion is translucent and the vegetables are slightly softened, about 5 minutes.

Stir in the diced tomatoes (with their juice), black beans, and frozen corn. Return the soup to a simmer and cook, uncovered, for 5 minutes, or until the black beans are heated through and the corn is tender.

Season the soup to taste with salt and freshly ground black pepper. Serve hot.

For a vegetarian or vegan option, substitute vegetable broth for the chicken broth.
To add extra depth of flavor, consider adding a bay leaf to the soup while it simmers.
A squeeze of fresh lime juice at the end brightens the flavors.
This soup is even better the next day! Store leftovers in an airtight container in the refrigerator for up to 3 days.
