For a vegetarian option, omit the ham hock and use vegetable stock. Consider adding a smoked paprika to mimic the smoky flavor.
Feel free to add other vegetables like carrots, onions, or celery for added depth of flavor. Sauté them before adding the stock.
A dollop of sour cream or a sprinkle of fresh parsley adds a lovely finishing touch.
