For an extra layer of flavor, consider adding a pinch of smoked paprika or a dash of chili powder along with the cumin.
If fresh corn is not available, you can substitute with frozen corn kernels. No need to thaw before adding to the skillet.
To peel tomatoes easily, score the bottom of each tomato with an 'X', then briefly immerse them in boiling water for about 30 seconds. The skin should easily peel off.
For a spicier kick, add a finely chopped jalapeño pepper along with the onions.
