Prepare the Chicken: Remove any giblets from the chicken. Rinse the chicken under cold water and place it in a large stockpot. Add 1 teaspoon of salt, then cover the chicken completely with water. Bring to a boil over high heat. Once boiling, reduce heat to low, and gently simmer for approximately 1 hour, skimming off any foam that rises to the surface. (1 hour)

Prepare the Noodle Dough: In a large bowl, combine the flour and a dash of salt. Create a well in the center of the flour. Crack the eggs into the well, then add the vegetable oil. Gradually incorporate the flour into the eggs, mixing until a stiff dough forms. Turn the dough out onto a lightly floured surface and knead for about 10 minutes, until smooth and elastic. Cover the dough and let it rest for 10 minutes. (20 minutes)

Roll and Cut the Noodles: Divide the dough in half. On a well-floured surface, roll out one piece of dough into a thin rectangle, about 1/8 inch thick. Sprinkle the dough sheet lightly with flour, then roll it up loosely into a cylinder. Using a sharp knife, cut the cylinder into 1/2-inch wide noodles. Unroll the noodles and sprinkle them with flour to prevent sticking. Repeat with the remaining dough. (20 minutes)

Combine and Cook: Carefully remove the cooked chicken from the broth and set it aside to cool slightly, about 10-15 minutes, until it is cool enough to handle. Remove the skin and bones from the chicken, shred the meat, and return it to the broth. Bring the broth to a rolling boil, then gently drop in the fresh noodles. Reduce the heat to medium-low and simmer for about 10 minutes, or until the noodles are tender, slightly puffed, and have lightened in color. (25 minutes)

For an even richer flavor, use chicken broth instead of water to cook the chicken.
Add vegetables like carrots, celery, and onions to the broth while the chicken simmers for added depth of flavor.
If you don't have time to make homemade noodles, you can use store-bought egg noodles.
