Return the chicken to the pot, nestling it among the vegetables. Add enough chicken broth to almost cover the chicken and vegetables. Stir in Italian seasoning, rosemary, salt, and pepper to taste. Bring the mixture to a boil. (5 minutes)

Cover the pot, reduce heat to low, and simmer gently, stirring occasionally, until the chicken is cooked through and tender, about 1 hour. (60 minutes)

Remove the lid and increase the heat to medium-high. Simmer, stirring occasionally, until the sauce has reduced and thickened to your liking, about 15 minutes. (15 minutes)

For an even richer flavor, use bone-in, skin-on chicken thighs.
