For a spicier kick, leave some of the jalapeño membranes intact. To prevent the jalapeños from tipping over in the oven, nestle them closely together in the baking dish. For a richer flavor, try using a blend of cheeses in the filling, such as cheddar or Monterey Jack. Make these ahead of time! Stuffed jalapeños can be assembled a day in advance and baked just before serving.
