For an even richer flavor, consider adding a few cloves of garlic, minced, to the herb butter mixture. If the skin starts to brown too quickly, tent the turkey breast with foil during the later stages of roasting. The pan drippings make an exceptional gravy. Simply strain them, skim off any excess fat, and thicken with a cornstarch slurry or roux.
