In a large bowl, whisk together whole wheat flour, oats, all-purpose flour, baking soda, 1 1/2 teaspoons cinnamon, and salt. (5 minutes)

In a separate mixing bowl, beat 2 cups brown sugar with 3/4 cup softened butter until creamy. Beat in sour cream, mashed bananas, eggs, and vanilla extract until smooth. (10 minutes)

Gradually stir the dry ingredients into the banana mixture until just combined. Fold in 2 cups chopped dates, 1 cup walnuts, and 1/2 cup toasted coconut. (5 minutes)

Spoon the batter evenly into the prepared loaf pans. Sprinkle the tops of each loaf with about 1 tablespoon of dark brown sugar and 1 1/2 teaspoons each of dates, walnuts, and coconut. Brush each loaf with melted butter for a shiny glaze. (10 minutes)

Bake in the preheated oven until the loaves are browned and a toothpick inserted into the center comes out clean, about 1 hour. (Bake time: 60 minutes)

For a richer flavor, try browning the butter before adding it to the sugar mixture.
If you don't have sour cream, plain Greek yogurt makes an excellent substitute.
Feel free to experiment with different nuts and dried fruits – pecans and dried cranberries are delicious additions.
To ensure even baking, rotate the loaf pans halfway through the baking time.
Let the loaves cool completely in the pans before slicing to prevent them from crumbling.
