Adjust the amount of chile de arbol peppers to control the spiciness of the stew. For a milder flavor, remove some of the seeds from the peppers before blending. For a richer flavor, consider using pork shoulder instead of pork roast. It may require a longer cooking time to become tender. The stew tastes even better the next day, as the flavors have had more time to develop. Store leftovers in an airtight container in the refrigerator for up to 3 days.

Dec 6, 2024I found it a little too spicy for my taste, even after seeding the chiles. Next time, I'll use fewer chiles.
