Follow The Directions

01

Step
5 mins

Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper. (5 minutes)

02

Step
3 mins

In a large bowl, cream together 1/2 cup softened butter and granulated sugar until light and fluffy. (3 minutes)

03

Step
1 mins

Add baking powder and baking soda; beat until just combined. (1 minute)

04

Step
2 mins

Gradually beat in 1/3 cup thawed pink lemonade concentrate and egg until well combined. (2 minutes)

05

Step
3 mins

Slowly add flour, mixing until just incorporated. Be careful not to overmix. (3 minutes)

06

Step
5 mins

Drop dough by rounded spoonfuls onto the prepared baking sheet, leaving about 2 inches between each cookie. (5 minutes)

07

Step
12 mins

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. (12 minutes)

08

Step
10 mins

Transfer cookies to a wire rack to cool completely. (10 minutes)

09

Step
3 mins

While the cookies are cooling, prepare the icing: In a medium bowl, combine confectioners' sugar, 2 tablespoons thawed pink lemonade concentrate, and 2 tablespoons softened butter. (3 minutes)

10

Step
2 mins

Beat with an electric mixer until smooth and creamy. (2 minutes)

11

Step
1 mins

If desired, add 2 drops of red food coloring to achieve your desired shade of pink. (1 minute)

12

Step
15 mins

Once the cookies are completely cool, spread the icing evenly over the tops of each cookie. Allow the icing to set before serving. (15 minutes)

For a more intense lemonade flavor, add 1 teaspoon of lemon zest to the cookie dough.
If you don't have pink lemonade concentrate, you can use regular lemonade concentrate and add a drop or two of red food coloring to the dough.
For softer cookies, avoid overbaking them. They should be lightly golden around the edges but still slightly soft in the center.
The icing can be adjusted to your preference. Add more lemonade concentrate for a thinner icing, or more confectioners' sugar for a thicker icing.
Store the cookies in an airtight container at room temperature for up to 3 days.

My icing was a little too thin, but the flavor was still amazing. Next time, I'll add a little more confectioners' sugar.
