For an extra layer of flavor, try using a blend of cheeses, such as mozzarella or fontina, in addition to provolone. Adjust the amount of jalapenos and cayenne pepper to your desired level of spice. To make ahead, assemble the dip and store it in the refrigerator until ready to bake. Add a few minutes to the baking time if baking from cold. If you want to keep warm, you can place the baking dish on a hot pad on the table.
