Follow The Directions

Preheat oven to 300°F (150°C). (5 minutes)

In an enameled cast iron Dutch oven, combine chicken thighs, butternut squash, onion, chicken stock, paprika, garlic, salt, marjoram, onion powder, garlic powder, oregano, and pepper. Pour diced tomatoes on top. (10 minutes)

Cover and bake in the preheated oven until chicken is very tender, about 1 hour 30 minutes. (90 minutes)

Uncover and continue baking until most of the butternut squash has melted into the sauce, approximately 30 minutes more. (30 minutes)

Shred chicken with two forks within the Dutch oven, incorporating it back into the butternut squash sauce. (5 minutes)

For an extra layer of flavor, toast the paprika in a dry pan over medium heat for about 30 seconds before adding it to the Dutch oven.
If you don't have fresh marjoram, substitute 1 teaspoon of dried marjoram.
Serve these tacos with warm corn or flour tortillas, and your favorite toppings such as lime wedges, fresh cilantro, sour cream or Mexican crema, diced avocado, and a drizzle of hot sauce.
