Gently nestle the chicken breasts into the simmering sauce, ensuring they are mostly submerged. Cover the skillet tightly with a lid, reduce the heat to medium, and cook, stirring occasionally to prevent sticking, until the chicken is cooked through and its internal temperature reaches 165°F (74°C). (20-25 minutes)

Once the chicken is cooked, remove the skillet from the heat. Let it rest, covered, for 5 minutes before serving.

For an extra layer of flavor, consider adding a splash of dry white wine to the skillet along with the tomatoes.
Serve this Mediterranean chicken over cooked penne pasta, rice, couscous, or even creamy polenta.
Garnish with freshly chopped basil or parsley and a sprinkle of grated Parmesan or Romano cheese for a final touch of elegance.
Feel free to add other vegetables you like, such as bell peppers, zucchini, or spinach. Add them along with the tomatoes.
