Baker's ammonia (ammonium bicarbonate) is a traditional leavening agent that gives these cookies their unique texture and flavor. It can be found at specialty baking stores or online. If you can't find it, you can substitute 1 1/2 teaspoons of baking powder, but the flavor and texture will be slightly different.
