For a cleaner cut, chill the dough very well before slicing. Toasting the walnuts enhances their flavor. Spread them on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until fragrant. If the dough is too soft to slice cleanly, return it to the refrigerator for a short time to firm up. Store the baked cookies in an airtight container at room temperature for up to a week.
