For an extra layer of flavor, try using a smoked cheddar. Adjust the amount of Dijon mustard to your preference. If you don't have leeks, you can substitute with 1/2 cup of finely chopped yellow onion. To make ahead, prepare the macaroni and cheese through step 9, then cover and refrigerate for up to 24 hours. Add the bacon just before serving.
