If you don't have fresh thyme, 1 teaspoon of dried thyme can be substituted. Feel free to add other vegetables to the mix, such as carrots or parsnips. To ensure even cooking, make sure the sweet potato wedges and Brussels sprouts are all roughly the same size. If the Brussels sprouts start to get too dark during roasting, you can tent the pan with foil.
